Caitlin Jacobsen, dietetic intern

Caitie Jacobsen was born and raised in Conifer, Colorado. She attended Colorado State University in Fort Collins, CO where she earned her bachelor’s degree in Food Science and Human Nutrition in 2017. Caitie is currently pursuing a Master’s of Public Health Degree in Maternal and Child Health from the Colorado School of Public Health. She is also a dietetic intern at Tri-County Health Department in Greenwood Village, CO working towards her Registered Dietitian (RD) credentials.

Caitie’s interest in nutrition began on a mission trip to Zambia, Africa where she had the opportunity to work in schools and nutrition centers. After a short time working in and studying Early Childhood Education, Caitie decided to combine her passion for nutrition with her passion for working with kids. At Colorado State University, Caitie was the Manager of an on-campus daycare program, a Food Safety Intern with CSU Extension of Larimer County, the Special Events Coordinator at the Larimer County Farmers’ Market, and a volunteer with the Matthews House Homework Helpers program, the Food Bank for Larimer County, and the UC Health-Healthy Hearts program. Through these experiences, Caitie gained an appreciation for access to healthy food, nutrition education programs, and pediatric health and wellness.

In her free time, Caitie enjoys cooking, hiking, telemark skiing, fishing, backpacking, camping, running, and traveling.
